1. Preheat properly

Make sure your BBQ is hot before you start cooking – this will help to add the yummy crust and smoky BBQ flavour we all love. This is true especially for your favourite cut of steak. You want to hear that sizzle when the meat hits the hotplate!

2. Minimise the mess

To save cleaning time after you’ve enjoyed your marinated meat cooked on the BBQ, cover the hot plate with baking paper and cook as usual on top of that.

3. Don’t fuel the fire with fat
Make sure your meat is well drained of excess marinade, and using a can of spray-on oil, spray your meat rather than your BBQ to prevent flare ups. Fattier cuts can even be cooked without oil as the heat will release enough fat to brown the meat nicely.

4. Forks away

Don’t prick your sausages! You’ll lose the tasty juices as they cook. Unlike a steak where you want the plate as hot as possible to brown the outside of the meat to get a tasty crust, sausages benefit from a low to medium heat. This will stop them bursting on the BBQ and will ensure that they are cooked all the way through.

5. Get gassed

Keep a spare gas bottle on hand – they always seem to run out when you least expect it.

6. Remember food hygiene
It’s funny how the outdoors can make some people forget the basics. Always put your cooked food on a clean plate or chopping board and never add marinade that was used for raw meat to cooked meat.

7. Seasoning

Season meat with salt prior to cooking. Pepper is best applied after grilling as it can become bitter when cooked.

8. Expand the menu

We all love a chevapchichi fresh from the BBQ, but why not explore some tasty accompaniments that can also be prepared on the grill? Sliced vegetables such as zucchini, eggplant and capsicum make fuss-free healthy side dishes when grilled – simply season and dress with olive oil.

9. Condiments ahoy

Mix up your BBQ repertoire with some delicious and different condiments – try garlic yoghurt dressing with spicy kofta, a fresh and zingy salsa with chevapchichis or even a blue cheese sauce with your next gourmet burger.

10. Meat needs R & R too

Give your cooked meat a chance to rest when it comes off the grill – it will help ensure your meal is moist, tender and juicy. Take it from the heat and place it on a warm plate or serving platter. Cover the meat loosely with foil (as opposed to covering it tightly which will make the hot meat sweat).
