Greek Style Pita Pocket Breads with Chicken Kofta and Shaved Cucumber

Ingredients
500g Olga’s Fine Foods chicken kofta
Dressing:
½ cup tahini
½ cup natural yoghurt
2 cloves garlic, peeled
juice of 1 lemon
salt and pepper to taste
¼ cup water
PITA POCKETS
4-6 pocket breads cut in half
3 Lebanese cucumbers, shaved
1 bunch mint, leaves picked from stem
1 small Cos lettuce, leaves separated
Method
- Prepare the kofta as per packet instructions.
- To make the dressing – Place all the ingredients in a blender, combine, check and adjust seasonings.
- For a great round table sharing dish, place all components on a large board and allow guests to create their own.
- Quick tip: Fill a squeezy bottle with the tahini yoghurt sauce, so much easier.
- Alternately, prepare pocket breads by filling each half with a lettuce leaf or two, chicken kofta and cucumber. Drizzle generously with the tahini and yoghurt sauce and scatter with fresh mint leaves.
- Serve prepared pockets in a basket for all to enjoy!!
