Salmon Patty Tacos with Mango and Coriander Salsa

Serves: 4

Ingredients:

1 tbsp extra virgin olive oil
1 pack of Olga’s Fine Foods Salmon Patties
1 cup red cabbage, shredded
1 avocado, sliced
1 lime, chopped into wedges
6 tortillas

Mango salsa:
1 cup mango, diced
¼ red onion, diced
1 green chilli, de-seeded and diced
½ bunch coriander, finely chopped
1 garlic clove, minced
Juice of 1 lime
Salt, to taste

Method:

  1. Heat olive oil in a pan on medium-high heat. Add the salmon patties and cook for 5 minutes on each side, or until golden and cooked through.
  2. For the mango salsa, combine all ingredients in a large bowl, toss to combine then season as needed.
  3. To assemble, place a salmon patty on each tortilla, then top with the mango salsa, shredded cabbage, avocado and coriander leaves.
