Crispy Pork Schnitzel Focaccia

Ingredients:

  • 1 pack Olga’s Fine Foods Pork Schnitzel
  • 1 large focaccia or Turkish bread, sliced in half horizontally
  • 80g unsalted butter, softened
  • 1 tsp flaked salt
  • 1 tbsp finely chopped chives
  • 1 small garlic clove, crushed
  • 1/4 iceberg lettuce, finely shredded
  • Pickled onions
  • 1/2 cup grated parmesan, plus extra to serve
  • Olive oil, for frying
  • Salt and pepper

Method:

  1. In a small bowl, combine the butter, chives and a pinch of salt. Spread generously over the cut sides of the focaccia or Turkish bread.
  2. Heat a generous layer of olive oil in a large frying pan over medium-high heat. Once hot, cook the pork schnitzels in batches (don’t overcrowd the pan) for 3-4 minutes each side, or until golden, crisp and cooked through. Transfer to a paper towel-lined plate.
  3. Assemble the sandwiches by layering shredded iceberg lettuce over the base, followed by the crispy pork schnitzels, a generous grating of parmesan, and pickled onions. Finish with a pinch of salt and pepper and serve
