Luxe Aussie Chicken Burgers
Serves 6
Ingredients:
- 1 x 500g pack Olga’s Fine Foods Chicken Patties
- 6 brioche buns, halved (I used Riverina Bakery)
- 2 brown onion, thinly sliced
- It’s Olio Extra Virgin Olive Oil, for drizzling
- 6 slices cheddar cheese
- 2 tomatoes, sliced
- 12 slices tinned beetroot
- ½ iceberg lettuce, torn
- Olga’s Fine Foods Divine Chicken Rub
- 1 x jar Nice Pickles ‘Table Pickle’
- TRUFF Mayonnaise
- Bippi’s Italian Style Sriracha
Method:
- Fit your Gourmet Grill with the griddle/grill top and preheat to a medium setting. Place the brioche buns, cut side down, on the griddle/grill top. Heat until golden, then transfer to a serving dish and set aside.
- Heat a tablespoon of olive oil on the griddle side. Add the sliced onions and season with Olga’s Fine Foods Divine Chicken Rub, salt, and pepper. Cook, stirring frequently, until caramelized, about 15-20 minutes. Adjust seasoning as needed. Remove from heat and set aside.
- Increase heat to medium-high. Add the chicken patties and cook for 3-4 minutes on each side. Top with cheese slices during the last 2 minutes of cooking.
- To assemble, spread mayonnaise on the cut side of each bun. Place a cooked chicken patty with melted cheese ontop, layer with 2 slices of tomato, 2 slices of beetroot, torn iceberg lettuce, pickles, caramelized onions and a drizzle of Bippi’s Italian Style Sriracha. Top with the other half of the bun and serve.
