Crispy Chilli Thai Basil Chicken Noodles

Serves: 4

Ingredients:

300g thick egg noodles
500g Olga’s Fine Foods Chicken Patties
1 tbsp extra virgin olive oil
Salt and pepper, to taste
1 small brown onion, finely sliced
2 garlic cloves, minced
1 red chilli, finely sliced
1 red capsicum, sliced into strips
Punch of fresh Thai Basil
2 tbsp soy sauce
1 tbsp honey
1 tsp sesame oil
2 tbsp Umami Papi Crispy Chilli Oil, plus extra for cooking

Method:

  1. Cook the egg noodles according to the packet instructions. Once cooked, drain, rinse under cold water, and set aside.
  2. In a small bowl, combine the soy sauce, honey, sesame oil and 1 tablespoon of Umami Papi Crispy Chilli Oil.
  3. In a large bowl, crumble the chicken patties. Heat extra virgin olive oil and 1 teaspoon of the oil part of Umami Papi Crispy Chilli Oil in a large pan over high heat. Once hot, add the crumbled chicken and cook, stirring regularly, for 3-4 minutes or until golden. To the same pan, add the onion, garlic, capsicum and red chilli. Cook for another 2-3 minutes until fragrant. Add the sauce and cook for another minute, then reduce heat and add the cooked noodles and Thai basil. Toss to combine, ensuring the noodles are coated in the sauce and warmed through.
  4. To serve, divide the noodles between four plates and garnish with a drizzle of Umami Papi Crispy Chilli Oil.
