Chicken Patty Yiros with Sublime Souvlaki Chips

Ingredients

6 pita breads
1 pack of Olga’s Fine Foods Chicken Patties
1 head of green lettuce 

Chips
1.5kg white potatoes, sliced into chip-sized pieces
Olga’s Fine Foods Sublime Souvlaki seasoning
1 tbsp extra virgin olive oil 

Tzatziki
1 Lebanese cucumber, grated
300g Greek yoghurt
1 garlic clove, minced
2 tsp dill, finely chopped
2 tsp lemon juice
Salt, to taste 

Salad
1 small red onion, thinly sliced
1 Lebanese cucumber, diced
110g cherry tomatoes, halved
1 tbsp lemon juice
Pinch of finely chopped parsley
Salt and pepper, to taste 

Method

  1. Preheat oven to 220°C. Line two baking trays with parchment paper. Place the chopped potatoes on one baking tray, drizzle with olive oil and season with Olga’s Sublime Souvlaki seasoning. Toss until evenly coated then bake for 30 minutes, turning halfway through. 
  2. After 30 minutes, reduce the oven temperature to  200°C and place the chicken patties onto the second tray, lightly spray with olive oil and bake for 15-20 minutes with the potatoes, or until golden. Chop the cooked patties into smaller pieces to ensure they fit nicely in the yiros.
  3. For the tzatziki, combine all ingredients in a bowl, mix to combine, then season with salt as needed.
  4. For the salad, combine all ingredients in a large bowl, mix to combine, then season with salt and pepper as needed. 
  5. To assemble, warm the pita bread on a pan or in the microwave for 10 seconds (optional). Spread a layer of tzatziki onto the pita, followed by the salad and chopped chicken patties. Serve alongside the Sublime Souvlaki chips and enjoy!
