Chicken Yiros Bowls

Ingredients:

  • 1 x 500g pack Olgas Fine Foods Chicken Yiros
  • 1 tbsp extra virgin olive oil (plus extra for drizzling)
  • 2 cups cherry tomatoes, halved
  • 2 cucumbers
  • 4 wraps, sliced into triangles
  • 2 cups Greek yoghurt
  • Juice of ½ lemon (plus extra for drizzling)
  • Salt and pepper, to taste
  • ½ cup Kalamata olives
  • 1 head iceberg lettuce, shredded
  • 150g feta cheese, crumbled
  • Fresh dill, for garnish

Method:

  1. Heat olive oil in a large frying pan over medium heat. Cook Olgas Fine Foods Chicken Yiros until golden and cooked through (about 10 minutes). Set aside.
  2. Grate half a cucumber and stir it into the yoghurt with lemon juice, salt and pepper to make a fresh tzatziki.
  3. Slice the remaining cucumber and halve the cherry tomatoes. Cut the wraps into triangles.
  4. Divide the shredded lettuce among 4 bowls. Top with chicken yiros, cherry tomatoes, sliced cucumber, Kalamata olives, wrap triangles and crumbled feta. Add a generous dollop of tzatziki, sprinkle with fresh dill, then drizzle with extra olive oil and lemon juice. Serve immediately.
