Spicy Chicken Yiros Burrito Bowl

Ingredients:

  • 1 packet of Olga’s Fine Foods Chicken Yiros
  • Olga’s Fine Foods Aussie Heatwave seasoning
  • 1 cup corn kernels (fresh or frozen)
  • 1 ripe avocado, sliced
  • Juice of ½ lime
  • 2 ripe tomatoes, diced
  • ¼ red onion, finely diced
  • Handful coriander, chopped
  • Olive oil, for cooking

To serve

  • 500g steamed Jasmine rice, to serve
  • Shredded lettuce
  • Sour cream
  • Fresh coriander
  • Extra lime wedges

Method:

  1. Heat a drizzle of olive oil in a pan over medium-high heat. Add Olga’s Fine Foods Chicken Yiros and sprinkle generously with Aussie Heatwave seasoning. Pan fry for 8-10 minutes until golden, slightly crisp at the edges, and cooked through.
  2. In the same pan add corn kernels and cook until lightly charred and smoky. Sprinkle with Aussie Heatwave seasoning. Toss to coat.
  3. Combine tomato, red onion, lime juice, salt, and coriander. Toss gently and set aside.
  4. To assemble, start with a base of rice, then layer on the shredded lettuce, cooked chicken yiros, charred corn, tomato salsa, sour cream, sliced avocado, coriander and lime
