Roast Veggie Tray Bake

Roast Veggie Tray Bake made with Olga’s Fine Foods Iconic BBQ seasoning. This is a perfect side dish for our Beef Chevapchichis or Chicken Schnitzels

Ingredients:

  • Olga’s Fine Foods Iconic BBQ seasoning (available from our online shop🛒)
  • 4 portobello mushrooms
  • 1 red onion, sliced into wedges
  • 1 bunch baby carrots, halved
  • 2 tbsp olive oil
  • ½ cup pomegranate seeds
  • 2 tbsp tahini
  • Juice of ½ lemon
  • 1 tbsp warm water
  • Fresh parsley, to serve

Method:

  1. Preheat oven to 190°C (fan forced).
  2. Place the veggies on a lined baking tray and drizzle with olive oil, a generous shaking of Olga’s Fine Foods Iconic BBQ seasoning. Toss well to coat evenly. Roast for 25-30 minutes, tossing halfway, until the edges are charred and golden.
  3. In a small bowl, combine the tahini, lemon juice, water and a pinch of Iconic BBQ seasoning. Stir well until smooth.
  4. Transfer to a serving dish and top with pomegranate seeds and the tahini dressing, and finish with chopped parsley. Serve on pearl couscous.
