Smashed Chimichurri Chevapchichis

Ingredients:

  • 1 x 500g pack @olgasfinefoods Chevapchichi
  • 1 tbsp @olgasfinefoods Beef Boss
  • 1 loaf Turkish bread or flat ciabatta
  • ¼ cup @toadskitchencupboard Chimichurri Mix
  • ⅓ cup @tasteology_aus Lemon Olive Oil
  • 1 tbsp red wine vinegar
  • 1 bunch of coriander, chopped
  • 2 tbsp red onion, finely chopped
  • Pinch of salt
  • Side salad, to serve

Method:

  1. Place the chevapchichis in a bowl, add the Beef Boss seasoning, and mash thoroughly until the mixture is well combined.
  2. Slice the bread in half and pack the chevapchichi mixture onto the bread, ensuring it’s evenly spread and compact. Brush with a little olive oil.
  3. Open your GreenPan Contact Grill to the flat position, creating a single cooking surface, and preheat to 260°C. Once hot, place the bread on the grill with the chevapchichi side down. Cook for 5-7 minutes or until the meat is cooked through.
  4. Meanwhile, combine the chimichurri mix in a small bowl with the lemon olive oil, red wine vinegar, coriander, red onion, and a pinch of salt.
  5. Remove the bread from the grill and spread the chimichurri mix over the chevapchichi. Slice the bread and serve with a side salad.
