Chicken Pattie Slider with Red Cabbage Slaw

Ingredients
500g Olga’s Fine Foods chicken patties
6 medium Brioche buns or slider rolls
extra coriander to serve
Asian slaw
¼ red cabbage, finely shredded
1 green apple, cut into julienne match sticks with skin on
½ cup coriander leaves, roughly chopped
2 spring onions, finely sliced
kewpie mayonnaise
salt and pepper to taste
Method
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Place the chicken patties onto prepared tray, lightly spray with olive oil and bake for 15 minutes, or till golden.
- To assemble the slaw – Toss cabbage, apple, coriander and spring onions together in a bowl, dress with kewpie mayonnaise, season to taste.
- To serve, assemble chicken patties, Asian slaw in warm brioche rolls. Secure with a pick or bamboo skewer through the centre of the roll.
