Chicken Pattie Slider with Red Cabbage Slaw

Ingredients

500g Olga’s Fine Foods chicken patties
6 medium Brioche buns or slider rolls
extra coriander to serve

Asian slaw

¼ red cabbage, finely shredded
1 green apple, cut into julienne match sticks with skin on
½ cup coriander leaves, roughly chopped
2 spring onions, finely sliced
kewpie mayonnaise
salt and pepper to taste

Method

  1. Preheat oven to 180°C. Line a baking tray with baking paper.
  2. Place the chicken patties onto prepared tray, lightly spray with olive oil and bake for 15 minutes, or till golden.
  3. To assemble the slaw – Toss cabbage, apple, coriander and spring onions together in a bowl, dress with kewpie mayonnaise, season to taste.
  4. To serve, assemble chicken patties, Asian slaw in warm brioche rolls. Secure with a pick or bamboo skewer through the centre of the roll.
