Chicken Schnitzel Caesar Salad

Ingredients
500g or 4 pieces Olga’s Fine Foods chicken schnitzels
¼ cup olive oil for frying
4 rashers middle bacon, trimmed, roughly chopped
2 baby cos lettuce hearts, leaves torn
1/2 cup Caesar salad dressing
salt and pepper to taste
4 soft poached eggs
Shaved parmesan cheese, to serve
Method
- Preheat oven to 180°C. Line a baking tray with baking paper.
- Place bacon onto prepared tray and bake for 10 minutes or till crisp. Remove from oven, drain on paper towel.
- In a large frying pan heat olive oil, when hot add the schnitzels and cook for 3-4 minutes on each side. The schnitzels should be a lovely golden colour. Remove for pan, drain on kitchen paper. When cool, cut into slices.
- Place lettuce and bacon into a large bowl, toss with salad dressing. Add sliced chicken schnitzel to the lettuce mix, and gently toss.
- Arrange salad on a serving platter or individual bowls.
- To serve, top salad with poached eggs, shaved parmesan and a little sprinkle of cracked black pepper.
