Chicken Schnitzel Tacos with Lime Aioli
Ingredients:
- 1 x 500g pack Olga’s Fine Foods Chicken Schnitzels
- 12 small tortillas
- ½ cup aioli
- 2 limes
- 1 cup red cabbage, finely shredded
- 1 avocado, sliced
- 1/4 cup coriander, chopped
- 1 tbsp chilli oil
- Salt and pepper, to taste
Method:
- Preheat the air fryer to 200°C. Spray the chicken schnitzels with olive oil and place them in the air fryer basket in a single layer. Cook for 10-12 minutes, flipping halfway through, until golden and crispy. Remove from the air fryer and season with salt.
- In a small bowl, mix together the aioli and the juice and zest of 1 lime. Season with salt and set aside.
- In a medium bowl, toss the shredded red cabbage with a splash of olive oil and a pinch of salt.
- Warm the tortillas in a dry skillet over medium heat for 30 seconds on each side. Slice the cooked chicken schnitzels into strips. Spread a dollop of lime aioli on each tortilla. Add a few strips of chicken schnitzel on top. Top with the shredded cabbage, sliced avocado and a drizzle of chili oil. Serve with lime wedges on the side.
