Chicken Yiros Bowls
Ingredients:
- 1 x 500g pack Olgas Fine Foods Chicken Yiros
- 1 tbsp extra virgin olive oil (plus extra for drizzling)
- 2 cups cherry tomatoes, halved
- 2 cucumbers
- 4 wraps, sliced into triangles
- 2 cups Greek yoghurt
- Juice of ½ lemon (plus extra for drizzling)
- Salt and pepper, to taste
- ½ cup Kalamata olives
- 1 head iceberg lettuce, shredded
- 150g feta cheese, crumbled
- Fresh dill, for garnish
Method:
- Heat olive oil in a large frying pan over medium heat. Cook Olgas Fine Foods Chicken Yiros until golden and cooked through (about 10 minutes). Set aside.
- Grate half a cucumber and stir it into the yoghurt with lemon juice, salt and pepper to make a fresh tzatziki.
- Slice the remaining cucumber and halve the cherry tomatoes. Cut the wraps into triangles.
- Divide the shredded lettuce among 4 bowls. Top with chicken yiros, cherry tomatoes, sliced cucumber, Kalamata olives, wrap triangles and crumbled feta. Add a generous dollop of tzatziki, sprinkle with fresh dill, then drizzle with extra olive oil and lemon juice. Serve immediately.
