Roast Veggie Tray Bake
Roast Veggie Tray Bake made with Olga’s Fine Foods Iconic BBQ seasoning. This is a perfect side dish for our Beef Chevapchichis or Chicken Schnitzels
Ingredients:
- Olga’s Fine Foods Iconic BBQ seasoning (available from our online shop🛒)
- 4 portobello mushrooms
- 1 red onion, sliced into wedges
- 1 bunch baby carrots, halved
- 2 tbsp olive oil
- ½ cup pomegranate seeds
- 2 tbsp tahini
- Juice of ½ lemon
- 1 tbsp warm water
- Fresh parsley, to serve
Method:
- Preheat oven to 190°C (fan forced).
- Place the veggies on a lined baking tray and drizzle with olive oil, a generous shaking of Olga’s Fine Foods Iconic BBQ seasoning. Toss well to coat evenly. Roast for 25-30 minutes, tossing halfway, until the edges are charred and golden.
- In a small bowl, combine the tahini, lemon juice, water and a pinch of Iconic BBQ seasoning. Stir well until smooth.
- Transfer to a serving dish and top with pomegranate seeds and the tahini dressing, and finish with chopped parsley. Serve on pearl couscous.
