Chicken Tacos with Pineapple Salsa

Ingredients:

1 pack of Olga’s Fine Foods Chicken Patties
6 tortillas 

Pineapple salsa:
2 cups pineapple, diced
¼ red onion, diced
1 green chilli, de-seeded and diced
½ bunch coriander, finely chopped
1 garlic clove, minced
Juice of 1 lime
Salt, to taste 

Guacamole:
2 avocados
1 tbsp pickled jalapenos, roughly chopped
¼ bunch of coriander, finely chopped
Juice of 1 lime
Salt, to taste

Method:

  1. For the pineapple salsa, combine all ingredients in a large bowl, toss to combine then season as needed. 
  2. For the guacamole, mash together all ingredients until well combined, then season with salt as needed
  3. To assemble, spread a layer of guacamole onto each tortilla. Top with the chicken patties and pineapple salsa, then garnish with crumbled feta.
