Chicken Meatball Banh Mi

Ingredients

2 tbsp mayonnaise
1 tbsp sriracha sauce
4 crusty bread rolls
1 cucumber, grated or thinly sliced
1 carrot, grated or thinly sliced
½ bunch coriander
½ bunch mint
1 red chilli, thinly sliced 

Meatballs
1 pack of Olga’s Fine Foods Chicken Patties
2 tsp soy sauce
2 tsp fish sauce
1 tsp lime juice
1 tbsp  extra virgin olive oil
1 tbsp sesame seeds 

Method

  1. In a small bowl, combine the mayonnaise and sriracha. 
  2. Place the chicken patties in a bowl and mash with your hands. Add the soy sauce, fish sauce and lime juice. Mix well to combine. With damp hands, roll the mixture into meatballs and set aside. 
  3. Heat olive oil in a pan over medium high heat. Once hot, add meatballs and cook until lightly browned; about 3-5 minutes, then add the sesame seeds and toss to coat. 
  4. Toast the rolls if desired, then spread the sriracha mayonnaise on both sides. Top with the meatballs, carrot, cucumber, coriander, mint and red chilli.
