Chicken Meatball Banh Mi
Ingredients
2 tbsp mayonnaise
1 tbsp sriracha sauce
4 crusty bread rolls
1 cucumber, grated or thinly sliced
1 carrot, grated or thinly sliced
½ bunch coriander
½ bunch mint
1 red chilli, thinly sliced
Meatballs
1 pack of Olga’s Fine Foods Chicken Patties
2 tsp soy sauce
2 tsp fish sauce
1 tsp lime juice
1 tbsp extra virgin olive oil
1 tbsp sesame seeds
Method
- In a small bowl, combine the mayonnaise and sriracha.
- Place the chicken patties in a bowl and mash with your hands. Add the soy sauce, fish sauce and lime juice. Mix well to combine. With damp hands, roll the mixture into meatballs and set aside.
- Heat olive oil in a pan over medium high heat. Once hot, add meatballs and cook until lightly browned; about 3-5 minutes, then add the sesame seeds and toss to coat.
- Toast the rolls if desired, then spread the sriracha mayonnaise on both sides. Top with the meatballs, carrot, cucumber, coriander, mint and red chilli.
